I had the remnants of my healthy taco today. It was good but my inner child was making faces. I had "taco's" from East West yesterday for lunch, and ate the leftovers today. They were made with blue corn tortilla's, hummus, broccoli, cauliflower, zucchini, fresh corn niblets, black beans, and carrots. I added chicken for a little extra protien.
I think the broccoli in the taco was really a good idea...but also very funny. It was obviously healthy food. But let's not hold a grudge. :-) I think it is such an amazing art, when people can cook healthy food that tastes really good, and isn't apparent as being good for you. When it's so good that you just can't wait to eat it, and it's not like..."yeah...you go first. (peer pressure) Mmmmm... See..I'm a full fledged grown up now. I like to eat things with roughage. Mmm... indigestable fiber.. Yummy."
There was a short lived cooking show that I liked, where this cook from a well known spa, would make dishes that were healthy, low in calories, and full of protien, nutrients, and fiber. But it was still really good.
